One Pot Garlic & Herb Chicken and Rice

Have you ever gotten to the point where you feel like you’ve spoiled your diet by eating too much junk food and need to detox and eat healthy for a bit? Well I am SO there right now. I love being a food blogger and would love to make it my full time job, but the one thing I really dislike is how much weight I’ve gained after making so many delicious treats. It’s a necessary evil in this line of work but I was so happy to partner with RiceSelect recently and use their Texmati Brown Rice to create not only a healthy meal, but a delicious One Pot Garlic and Herb Chicken and Rice.

Vegetarian Yellow Curry

I also took this curry up one more notch by serving it with RiceSelect Texmati Brown Rice. It is a very good brown rice. I typically think brown rice leaves something to be desired, but this was really a lovely, hearty rice. As I have become more and more environmentally conscious, buying ‘Grown in the USA’ products has become much more important to me. I love that Texmati rice is actually produced in Texas, is all-natural and non-GMO, so I feel great about eating it. It also holds its shape really well, and doesn’t go all mushy after sitting for 10 minutes like many types of rice. Hooray for non-soggy rice!

Great tasting meals are made from simple ingredients. Great tasting meals require a lot of work. Great tasting meals don’t have to cost a fortunate. All they take is a little bit of inspiration and some tasty ingredients. This recipe didn’t start off as a gumbo, I just had an idea in my head of the flavors I wanted to create, and in the end the stars aligned to form this. So this isn’t a true gumbo, but I think it’s definitely in the ballpark.
