- 1 cup cooked Sushi Rice
- 1 cup light coconut milk
- 1 cup pineapple juice
- 1/2 cup sugar
- 1/4 cup raisins
- 2 tablespoons coconut rum, or 2 teaspoons vanilla
- Prepare rice according to package directions.
- Combine cooked rice and remaining ingredients in a saucepan. Cook for 15 to 20 minutes over low heat stirring often.
- Remove from heat and chill for at least 1 hour before serving.
- Sprinkle lightly with nutmeg before serving (optional).
