Mint and Apple Brown Rice Salad Recipe
- 1 cup, uncooked Texmati® Brown Rice
- 1 cup cooked whole wheat berries, optional
- 1 Tbsp orange zest
- 1/3 cup fresh orange juice
- 2 Tbsps seasoned rice wine vinegar
- 2 Tbsps olive oil
- 1 cup fresh mint leaves, chopped
- 1 red or green apple, diced
- 1/2 cup toasted walnuts, chopped
- 2 green onions, sliced
- salt and ground black pepper, optional
- Prepare rice according to package directions.
- In a medium bowl, whisk together zest, juice, vinegar and olive oil. Fold in rice, and remaining ingredients. Season with salt and pepper, if desired. Serve room temperature or chilled.
