Mint and Apple Brown Rice Salad Recipe


  • 1 cup, uncooked Texmati® Brown Rice
  • 1 cup cooked whole wheat berries, optional
  • 1 Tbsp orange zest
  • 1/3 cup fresh orange juice
  • 2 Tbsps seasoned rice wine vinegar
  • 2 Tbsps olive oil
  • 1 cup fresh mint leaves, chopped
  • 1 red or green apple, diced
  • 1/2 cup toasted walnuts, chopped
  • 2 green onions, sliced
  • salt and ground black pepper, optional


  • Prepare rice according to package directions.
  • In a medium bowl, whisk together zest, juice, vinegar and olive oil. Fold in rice, and remaining ingredients. Season with salt and pepper, if desired. Serve room temperature or chilled.
