Bring the chicken broth to a boil. Sir in the RiceSelect® Royal Blend® Rice, cover, reduce heat to low and simmer for 15-20 minutes, or until there is no more liquid.
While the rice is cooking, melt the butter in a large skillet over medium high heat. Add the onion and apples and cook for 5 minutes or until softened.
Pour the cooked rice into the pan with the onions and apples. Add the dried cranberries, pecans, and apple cider vinegar. Stir until thoroughly mixed. Season to taste with salt and pepper, then serve.
