  1. Heat the oil over medium heat in a medium pot. Add onions, garlic and ginger and cook, stirring occasionally until onions begin to soften (about 5 minutes).

  2. Add all remaining stew ingredients and stir well. Bring to a boil, reduce to a simmer and cook for 20 minutes.

  3. Prepare rice according to package instructions.


  4. Place a scoop of rice in a bowl and top with a ladle of stew. Garnish.
