RiceSelect® Arborio Rice gives this rice pudding its ultra-velvety texture. Coconut milk and cream, the perfume of cinnamon and crunch of sugary cereal take every bite over the top.
In a medium saucepan, combine rice, coconut milk, sugar and cinnamon stick and bring to a boil. Reduce heat to medium-low, cover and simmer 20 minutes. Discard cinnamon stick.
Combine milk, coconut cream, cinnamon, vanilla, salt and stir into rice. Simmer over low heat 15 minutes, stirring occasionally, until thick and creamy. Divide evenly and serve warm topped with whipped cream, cinnamon sugar, if desired.
