  1. Prepare couscous according to package directions. Replace water with vegetable broth.

  2. In a large bowl, combine the pomegranate seeds, red bell pepper, cucumber, red onion, and parsley.

  3. Combine couscous with vegetable mixture.

  4. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper. Drizzle over the couscous salad and toss to coat. Sprinkle feta on top, if using.

  5. Chill for 30 minutes before serving to let the flavors come together. Serve cold or at room temperature.
