  1. Prepare rice according to package directions.
  2. Combine chicken, tomatoes, mango, cheese, basil, and pepper to rice and stir well. Turn burner to medium high and cook 5 minutes stirring occasionally. Spoon into serving bowl.

  • Make it meat free by using a vegetarian alternative such as tofu, tempeh, beans or extra vegetables.
