  1. In a sauce pot heat oil and add veggies and rice and sauté for 2-3 minutes.

  2. Then, add vegetable stock, seasoning mix, bay leaf, salt and pepper, and cook until rice is cooked well, and vegetables are soft. It takes about 25-30 minutes.

  3. Remove from heat and add coconut milk and spinach. The Spinach will wilt in the heat itself. Adjust the seasoning and salt according to taste. Serve warm and enjoy!
