  1. Season chicken with salt, paprika, and pepper.

  2. In a large skillet, heat olive oil over medium-high heat. Add chicken and cook for 4 minutes on each side. Remove and set aside.

  3. In the same skillet, add onion, garlic, and bell pepper. Sauté for 3 minutes until softened. Add cherry tomatoes, oregano, and thyme. Cook for an additional 2 minutes.

  4. Stir in rice and chicken broth. Bring to boil. Place chicken back into the skillet. Reduce heat to low, cover and simmer for 20 minutes. Ensure rice and chicken are cooked completely.

  5. Remove from heat and add olives and sprinkle with feta. Top with parsley, if using.
