Prepare orzo according to package directions.
In a medium pan, heat oil over medium heat. Add in sausage and crumble small pieces. Cook sausage for 8 minutes or until browned and cooked through. Place cooked sausage in a medium paper towel lined bowl to absorb excess fat.
In the same pan over medium heat, add butter, apples, onions, salt and pepper. Cook for 30 minutes or until softened and browned. Add garlic and cook for an additional minute.
In a bowl, combine orzo, sausage and apple mixture. Garnish with parmesan cheese and parsley.
