  1. In a large Dutch oven over medium heat, add oil and cook chicken thighs, skin side down, until golden brown and easily released from pot, about 15-18 minutes. Transfer chicken to a plate.

  2. In the Dutch oven over medium-low heat, add ginger, shallots and garlic. Cook until fragrant, about 2 minutes. Stir in rice, 3 cups water and 1 tablespoon soy sauce. Nestle chicken thighs into rice mixture. Cover pot and cook on low heat, about 25 minutes, until rice is cooked, and chicken has an internal temperature of 165°F.

  3. Microwave ¼ cup water until warmed, add peanut butter, 1 tablespoon soy sauce, chili garlic sauce, honey and lime juice. Whisk until smooth.

  4. Serve chicken and rice with peanut sauce. Top with fresh cilantro.

One of the oldest sweeteners in use today is honey, and early American settlers kept beehives close to their dwellings for this purpose. They discovered that honey added moisture to their breads and pastries.

Today, honey is a popular ingredient in baked goods, pies, salad dressings, marinades for grilling, and roasting meat and vegetables.

Bees that gather nectar from the white blooms of sourwood trees produce one of the best honeys available: sourwood honey. It has a characteristic caramel-spice flavor and is a light golden tint.

Tips to Use Honey

  • Mix equal parts honey and soy sauce and add ginger and garlic. Brush on salmon or chicken before roasting or grilling.

  • Use in your favorite granola recipe.

  • Toss cubes of roasted sweet potatoes with honey and red pepper flakes.

  • Make a honey mustard dipping sauce for chicken wings with equal parts honey, mustard, and mayonnaise.

  • Brush over fresh pineapple slices and run under the broiler.

  • Drizzle into your favorite Old Forge Bourbon cocktail.

  • Use instead of molasses in gingerbread and instead of corn syrup in pecan pie.

  • Pour over pancakes, scones, or buttered cornbread.

  • Drizzle over Manchego, Cheddar, or blue cheese.

  • Whisk honey into plain yogurt and top with fresh berries.

Gloss Your Veggies

With this inventive use of honey, vegetables become savory delicacies with robust flavors. Put one or two tablespoons of butter in a pan and roast carrots or your favorite veggie. Add a splash of water and a dab of honey halfway through cooking. Let the liquid evaporate. What is left is a lovely glaze.

Amp Up Your Ice-Cream

Making a fancy ice cream sundae is probably not the first thing that comes to mind when considering how to use honey. Maybe it should! 1 cup of ordinary balsamic vinegar and 1/2 cup of honey should be boiled until they get thick and reduced by half. It will then get fudgy with a sweet-tartness that's great atop a scoop of vanilla. Add some sea salt on top for perfection.
