Instructions

  1. Prepare pearl couscous according to package directions. Cool. Preheat grill at medium-high heat.

  2. Cook green beans in salted water. Drain; cool.

  3. Season chicken with salt and pepper. Grill chicken for 5 minutes per side or until cooked through and internal temperature is 165°F. Rest chicken for 10 minutes. When done, slice into strips.

  4. In a medium bowl, whisk together dressing ingredients.

  5. Mix together pearl couscous, green beans, bell pepper, and capers; add dressing to taste.

  6. Serve pearl couscous on large serving platter; top with chicken strips.
