  1. Prepare rice according to package directions.

  2. In a large skillet, heat 3 tbsp of oil over medium-high heat. Add onion, celery, garlic and salt. Cook for 6 minutes, stir until the onion is softened, and starting to brown.

  3. Add rice, pomegranate juice and orange zest and stir until fully combined. Bring to a simmer, then remove from the heat. Stir in pomegranate arils, parsley, pistachios, and the remaining olive oil.
