  1. Add 1 tbsp olive oil to a large pot over medium heat and add the shallot. Cook for 5 minutes, stirring occasionally.

  2. Add the pumpkin, rosemary, salt, pepper, and 2 tbsp olive oil and stir, cooking for another 5 minutes.

  3. Add the rice and stir for a few minutes to slightly brown.

  4. Add the cooking wine and simmer for 2 minutes.

  5. Add half of the vegetable stock, pumpkin puree, and boil until the rice absorbs it, then add the other half and repeat. Stir occasionally.

  6. Once all of the stock is absorbed (about 25 minutes), stir in the Parmesan cheese. Cover and let stand for 10 minutes before serving.

Get creative and have fun with plating your dish! We suggest using a large shallow bowl to showcase the risotto. Opt for one with earthy, muted tones or deep greens to complement the autumnal theme if possible.

Consider garnishing with fresh sprigs of rosemary, toasted pumpkin seeds, and/or grated Parmesan cheese. For the most visual appeal, create a slight well in the center of the risotto with a large spoon for topping placement.

Carefully wipe any smudges from the rim of the plate before serving for a clean and beautiful presentation.
