Prepare rice according to package directions.
Preheat oven broiler, and brush paneer with ½ Tbsp of ghee. Place paneer on a sheet pan, and place in the oven. Broil for 1 minute on each side allowing paneer to slightly brown.
In a large pot, add water, salt and bring to a boil. Add spinach to boiling water until wilted for 3 minutes. Remove and place in an ice bath. Remove and let cool.
Add spinach and ½ cup of water to a blender and puree until smooth.
In a medium pan, add ghee and cumin seeds. Cook for 1 minute. Add onions and jalapenos and sauté for 5 minutes.
Add ginger and garlic, cook for 2 minutes. Add spinach and cook for 3 minutes.
Add paneer and cream, cook covered on low heat for 3 minutes. Add salt, pepper, and lemon juice to taste.
Ladle over a bed of rice and serve.
