  1. Prepare rice according to package instructions. Cool.

  2. Place tomatillos and onions in a shallow pan and broil until vegetables start to blacken. Cool.

  3. Using an immersion blender, puree the tomatillos, onions, jalapeños, cilantro, lime juice, cumin, salt, honey and olive oil until smooth.

  4. Combine cooled rice, corn, radishes, cabbage and pumpkin seeds with the charred tomatillo dressing and mix well.
