Charred Broccolini with Saigon-Style Tofu

Ingredients

  • null 1 cup RiceSelect® Texmati Brown Rice
  • null 2 tsp ginger, grated or very finely chopped
  • null 1/4 cup lime juice
  • null 1 tbsp red pepper flakes
  • null 1 tbsp dried mustard
  • null 1/4 cup fish sauce (for vegetarian, substitute soy sauce)
  • null 3/4 cup + 2 tbsp canola oil, divided
  • null 1 bunch broccolini, tough part of stems removed and thick stalks cut in half lengthwise
  • null 1 lb. firm tofu, drained, crumbled
  • null 1/2 cup cilantro, mint, basil or any combination of the three, rough chopped
  • null Fried shallots or crispy onions (optional)

Instructions

  1. Prepare rice according to package instructions.
  2. Meanwhile, using an immersion or small blender, blend the ginger, lime juice, red pepper flakes, mustard, fish sauce and canola oil until dressing is fully emulsified.
  3. Heat 1 tablespoon oil in a large non-stick pan over medium-high heat. Add broccolini in one even layer. Allow broccolini to char before flipping over and charring the other side.
  4. Remove broccolini and wipe out the pan.
  5. Heat remaining 1 tablespoon oil in the same pan. Add tofu in one even layer and cook, stirring occasionally until tofu is browned evenly.
  6. Remove tofu from the pan and mix with 1/4 cup of the dressing.
  7. Place rice on a platter, top with tofu mix and broccolini. Drizzle with the remaining dressing and sprinkle with mixed herbs and fried onions, if using.
