Ingredients

  • null 1 lb ground beef
  • null 1 cup RiceSelect® Texmati White Rice
  • null 1 can (15 oz) black beans, rinsed and drained
  • null 1 can (15 oz) diced tomatoes with green chilies (undrained)
  • null 1 cup corn (frozen or canned)
  • null 1 packet taco seasoning
  • null 2 cups beef broth
  • null 1 cup Mexican blend cheese, shredded
  • null 1/4 cup sour cream
  • null 1/2 avocado, sliced
  • null 3 tbsp cilantro, chopped
  • null 3 tbsp jalapeños, chopped (fresh or pickled)
  • null 4 lime wedges

Instructions

  1. In a large skillet, brown the ground beef over medium heat for 6 minutes or until fully cooked. Drain excess fat, if necessary.
  2. Stir in the rice, black beans, tomatoes with juice, corn, taco seasoning, and beef broth.
  3. Prepare rice mixture according to package directions.
  4. Remove the skillet from the heat and sprinkle the cheese on top. Cover again and let it sit for a few minutes until the cheese melts.
  5. Fluff the rice with a fork and serve hot, topped with sour cream, avocado, cilantro, jalapeños, and lime wedges.
