Ingredients

  • null 3 tbsp vegetable oil
  • null 2 red chilies, thinly sliced
  • null 1 small onion, diced
  • null 2 1/2 cups leeks, thinly sliced
  • null 1 tbsp minced garlic
  • null 2 cups RiceSelect® Premium Black Rice
  • null 6 cups vegetable broth
  • null 1/2 tsp grated lime zest
  • null 11/2 tsp lime juice
  • null 1 tsp salt
  • null 1/2 tsp pepper
  • null 1 cup trimmed and cut asparagus (1-inch pieces)
  • null 1 cup frozen peas, thawed

Instructions

  1. In a large skillet set over medium heat, add oil. Stir in chilies, onion, leeks and garlic. Cook, stirring occasionally, for 3 to 5 minutes or until tender and fragrant. Add RiceSelect® Premium Black Rice and cook, stirring occasionally, for 3 to 5 minutes or until rice is toasted.
  2. Stir in vegetable broth, lime zest and lime juice; bring to a boil. Lower heat to simmer; cover and cook, stirring occasionally, for 25 to 30 minutes or until rice is almost tender and most of the liquid is absorbed. Season with salt and pepper.
  3. Stir in asparagus and peas and cook, stirring occasionally, for 3 to 5 minutes or until asparagus is tender crisp. Serve immediately.
