  • null 1 Tbsp chili powder
  • null 1 Tbsp brown sugar
  • null 1 tsp kosher salt
  • null 1 tsp pepper
  • null 1 tsp paprika
  • null 1 tsp smoked paprika
  • null 1 tsp garlic powder
  • null 1 tsp ground coriander
  • null ¼ tsp cayenne pepper
  • null ½ cup RiceSelect® Royal Blend® Rice
  • null 3 Tbsp canola oil, divided
  • null ½ cup onion, diced
  • null 2 cloves garlic, minced
  • null 1 cup walnuts, toasted
  • null 1 can (19 oz) black beans, drained and rinsed, divided
  • null 1 ¼ cups panko bread crumbs
  • null ¼ cup barbecue sauce
  • null 2 Tbsp ground flax
  • null 6 slices aged cheddar or Vegan cheddar
  • null 6 hamburger buns
  • null ¼ cup mayonnaise or vegan mayonnaise
  • null 4 tsp olive oil
  • null 1 tsp Dijon mustard
  • null 1 clove garlic, minced
  • null 1 cup arugula
  • null 1 ripe avocado, halved, pitted, peeled and sliced
  • null 6 thick slices tomato
  • null 6 red onion rounds, thinly sliced
  • null 6 slices pickles

Instructions

  1. Barbecue Spice Rub: Stir together chili powder, brown sugar, salt, pepper, paprika, smoked paprika, garlic powder, coriander and cayenne; set aside.
  2. Vegan Veggie Burgers: Prepare rice according to package directions; let cool completely. Heat 1 tbsp canola oil in small skillet set over medium heat; cook onion and garlic for 3 to 5 minutes or until tender. Let cool completely.
