Simple Chicken Biryani

Ingredients

  • null tbsp vegetable oil
  • null 1 lb boneless, skinless chicken thighs, cut into 1-inch pieces
  • null 1 onion, thinly sliced
  • null 3 cloves garlic, minced
  • null 1 tbsp grated fresh ginger
  • null 2 tsp garam masala
  • null 1 tsp ground cumin
  • null 1 tsp ground coriander
  • null 1 tsp paprika
  • null 1/2 tsp cayenne pepper
  • null 1 cup RiceSelect® Basmati rice
  • null 1 1/2 cups chicken broth
  • null 1/4 cup chopped fresh cilantro
  • null Juice of 1 lemon
  • null 1/4 tsp salt
  • null 1/4 tsp pepper, to taste

Instructions

  1. In a large deep skillet, heat the oil over medium-high heat. Add the chicken and cook for 4 minutes until lightly browned. Remove chicken and set aside.
  2. In the same pot, add the sliced onions and sauté for 5 minutes until softened and caramelized. Add the garlic and ginger and cook for 1 minute, until fragrant. Stir in the garam masala, cumin, coriander, paprika and cayenne. Cook for 1 minute.
  3. Add the rice and chicken broth. Bring to a boil, then reduce heat to low, cover and simmer for 15 minutes.
  4. Remove from heat and fluff the rice with a fork. Fold in the chicken, cilantro and lemon juice. Season with salt and pepper.
  5. Garnish with extra cilantro, if desired.
