Sticky Rice with Caramelized Bananas

Ingredients

  • null 1 cup RiceSelect® Sushi Rice
  • null 1 cup water
  • null 1/2 cup evaporated milk
  • null 5 1/2 tbsp packed brown sugar, divided
  • null 1 tsp vanilla extract
  • null 1/2 tsp ground cinnamon, divided
  • null 4 tbsp vegetable oil
  • null 4 bananas, sliced in half, lengthwise
  • null 1/4 cup raisins
  • null 1/4 cup toasted pecans, chopped
  • null 2 tbsp orange zest, grated

Instructions

  1. Prepare rice according to package directions. Stir in water, evaporated milk, 1 1/2 tbsp brown sugar, vanilla and pinch of cinnamon; keep warm and set aside.
  2. Meanwhile, heat oil in large skillet set over medium heat. Arrange bananas in skillet; sprinkle with remaining brown sugar and cinnamon. Cook for 3 to 5 minutes or until bananas are golden brown and sugar is caramelized. Add raisins; cook for 2 to 3 minutes or until raisins are softened.
  3. Serve caramelized bananas and raisins with warm sticky rice. Garnish with pecans and orange zest.
