Ingredients

  • null 1 cup RiceSelect® Basmati Rice
  • null 1 1/2 tbsp vegetable oil
  • null 1 1/2 tbsp Massaman curry paste, store-bought
  • null 1 lb boneless chicken thighs, cut into 1-inch pieces
  • null 1 can (13.5 oz) coconut milk
  • null ¾ cup chicken broth
  • null 2 medium potatoes, peeled and cubed
  • null 1 medium onion, cut into 8 pieces
  • null 1/2 cup roasted peanuts
  • null 1 tbsp fish sauce
  • null 1 tbsp brown sugar
  • null 1 tbsp lime juice
  • null 1 cinnamon stick
  • null 2 bay leaves
  • null Fresh cilantro (optional garnish)

Instructions

  1. Prepare rice according to package directions.
  2. In a large pot, heat oil over medium heat. Add curry paste and cook for 2 minutes.
  3. Add chicken and stir to fully coat with the paste. Cook for 2 minutes or until lightly browned on all sides.
  4. Stir in coconut milk and broth. Stir and bring to a simmer.
  5. Add potatoes, onion, peanuts, fish sauce, sugar, lime juice, cinnamon, and bay leaves. Reduce heat to low and simmer for 25 minutes, until the chicken and potatoes are tender, and the sauce has slightly thickened.
  6. Serve over rice and top with fresh cilantro, if using.
