Ingredients

  • null 1 cup RiceSelect® Royal Blend rice
  • null 8 large eggs
  • null 1/4 cup milk
  • null 1/2 tsp salt
  • null 1/4 tsp pepper
  • null 5 tbsp butter, divided
  • null 1 cup leftover Thanksgiving stuffing
  • null 1/2 cup cooked turkey, shredded
  • null 1/2 cup cheddar cheese, shredded
  • null 2 tbsp chives, chopped
  • null Cranberry sauce

Instructions

  1. Prepare rice according to package directions.
  2. In a large skillet over medium heat, add the 1 tbsp butter. Once hot, add the cooked rice, Thanksgiving stuffing, and turkey. Stir to combine and heat through for about 4 minutes.
  3. In another non-stick skillet, add remaining butter, and heat over medium-low heat. Pour a quarter of the egg mixture into the skillet, swirling to coat the bottom evenly. Cook for about 3 minutes, or until the edges begin to set and the bottom is lightly golden.
  4. Once the omelet is mostly set but still slightly runny on top, add a portion of the rice and stuffing mixture, about 1/4 of the filling to one half of the omelet. Sprinkle with cheese.
  5. Carefully fold the other half of the omelet over the filling. Cook for an additional 2 minutes, or until the cheese melts and the omelet is cooked through. Slide the omelet onto a plate and keep warm. Repeat the process with the remaining egg mixture and filling to make three more omelets.
  6. Garnish with chives. Add cranberry sauce on the side, if using.
