Rice & Cheese Spread Recipe
- 1 cup cooked Texmati® White Rice
- 1/2 pound Cheddar cheese, grated
- 1 tablespoon onions, minced
- 3 tablespoons green pepper, minced
- 3 pimiento stuffed olives, chopped
- 3 tablespoons sweet pickle relish
- 1 tablespoon pimiento, chopped
- 1 hard boiled egg, chopped
- 1/2 saltine crackers, finely crushed
- 1/2 low-fat mayonnaise
- 1/4 teaspoon salt (optional)
- Combine first seven ingredients in food processor until smooth. Remove to bowl and stir in remaining ingredients, mixing well.
- Shape into a log or pack into a container. Serve with assorted crackers and/or vegetables.
