- 1 cup, uncooked Texmati® Brown Rice
- 1 cup Italian flat-leaf parsley, chopped
- 3/4 cup cucumber, chopped
- 3/4 cup tomato, chopped
- 1/4 cup mint leaves, minced
- 1/4 cup olive oil
- 1/4 cup lemon juice
- 1 teaspoon salt (or to taste)
- 1/2 teaspoon ground black pepper
- Prepare rice according to package directions.
- In a large bowl, combine rice, parsley, cucumber, tomato, mint, olive oil, lemon juice, salt and pepper. Toss well.
