Southwest Lasagna Recipe


  • 2 cups, uncooked Texmati® Brown Rice
  • 1 lb. lean ground beef
  • 1 pkg taco seasoning
  • 2 cups (16 oz.) sour cream
  • 1 1/4 cups salsa
  • non-stick cooking spray
  • 3 cups shredded Cheddar cheese, divided
  • 1 cup crushed tortilla chips


  • Preheat oven to 350 degrees F.
  • Prepare rice according to package directions.
  • Brown ground beef in medium skillet, drain if necessary. Add taco seasoning per package instructions.
  • In medium bowl combine sour cream and salsa; set aside. Coat a 13X9 inch baking dish with cooking spray.
  • Place 3 cups of the rice in pan; top with half the sour cream mixture. Layer the seasoned ground beef on top, then 1 ½ cups cheese.
  • Add remaining rice then sour cream mixture. Cover with foil. Bake in preheated 350 degree F. oven for 15; remove foil. Sprinkle with remaining cheese and crushed chips. Return to oven and bake an additional 5 minutes or until cheese melts.
