In a large saucepan, sauté garlic 1min, in oil, over medium heat.
Add rice & cook, stirring for 2min.Stir in broth & herbs & bring to boil.
Reduce heat & simmer, covered until rice is tender, about 10min.
Add in veggies & beans. Cook covered over med heat, for about 10min. Stir in spinach & cook until wilted. Serve with lemon wedge.
