Preheat grill to 400F. Prepare couscous according to package directions.
In a small bowl, whisk apple juice, honey, 1/8 tsp salt, and 1/8 tsp pepper together. Slowly add in oil until it is fully incorporated.
Season the chicken with remaining salt and pepper. Add the chicken to the grill and cook for 18 minutes or until chicken is 165F.
Add apples to the grill for the remaining 5 minutes of the chicken cook. Turn occasionally.
Using the couscous as the base, place the chicken and apples on top. Drizzle apple juice mixture over top. Squeeze lemon wedges over top and garnish with parsley.
