In a medium bowl, mix together the curry powder, olive oil, honey, lemon zest and half the salt. Add the chicken and marinate for 30 minutes.
Prepare rice according to package instructions.
In a small bowl, combine the yogurt, cucumber, mint, cumin, garam masala and remaining salt.
Skewer the chicken onto 4 skewers and grill on all 4 sides for 2 minutes per side. Chicken is cooked when it reaches an internal temperature of 165º F. Serve skewers on a bed of rice with the cucumber raita.
