  1. Prepare quinoa according to package directions. Allow to cool.

  2. Place kale in a large bowl. Drizzle with a few drops of olive oil and a pinch of salt. Massage with hands for 1 minute until the leaves are darken and soften.

  3. In a small bowl, whisk together olive oil, vinegar, maple syrup, salt, and pepper.

  4. Add quinoa, kale, apple, squash, cherries, walnuts, and shallot to a large bowl. Toss with dressing until evenly coated. Sprinkle with feta.
