  1. In a large skillet set over medium heat, add oil. Stir in chilies, onion, leeks and garlic. Cook, stirring occasionally, for 3 to 5 minutes or until tender and fragrant. Add RiceSelect® Premium Black Rice and cook, stirring occasionally, for 3 to 5 minutes or until rice is toasted.

  2. Stir in vegetable broth, lime zest and lime juice; bring to a boil. Lower heat to simmer; cover and cook, stirring occasionally, for 25 to 30 minutes or until rice is almost tender and most of the liquid is absorbed. Season with salt and pepper.

  3. Stir in asparagus and peas and cook, stirring occasionally, for 3 to 5 minutes or until asparagus is tender crisp. Serve immediately.

  4. Tip:

    Not a fan of heat? Omit chilies for a milder flavor profile.
