  1. Cook 1 cup of RiceSelect Royal Blend® rice according to package directions. (Yields 2.5 cups.) While rice is cooking, heat 1 tablespoon of olive oil on medium heat in a large frying pan. Add garlic, ginger, and onions. Cook for 2 minutes or until fragrant.

  2. To the same pan, add red and yellow bell peppers. Cook for 5-6 minutes or until the peppers soften and the onion becomes translucent in color. Toss in cooked rice, soy sauce, and toasted sesame seed oil. Stir and cook for an additional 2-5 minutes, or until all the liquid has evaporated. Add salt and pepper to taste.
  3. While fried rice is cooking, bring 6 cups of water to a boil. Add 2 eggs. Cook for 7 minutes. Once done cooking, transfer eggs to an ice-cold bowl to cool. Then peel, slice and place jammy eggs on top of cooked rice.
  4. Garnish with basil, chopped onion, and ¼ avocado per serving. Add optional sesame seeds.
