Prepare rice according to package directions.
In a large bowl, combine all ingredients. Marinate in a refrigerator for 2 hours.
Remove bowl from refrigerator and place 4-5 lamb cubes per skewers.
Grill lamb for 15 minutes.
Remove skewers and serve over rice.
