Instructions

  1. Rice Bowl: Prepare rice according to package directions

  2. Meanwhile, heat 2 tbsp oil in large skillet set over medium-high heat; cook mushrooms; season with half the salt and black pepper, for 5 to 8 minutes or until starting to brown. Transfer to plate and keep warm.

  3. Add remaining oil to skillet. Reduce heat to medium; add kale and remaining salt and pepper and cook for 3 to 5 minutes or until wilted.

  4. Divide rice among 4 shallow bowls. Top with mushrooms, kale, sweet potato and avocado.

  5. Miso Dressing: Meanwhile, in medium bowl, whisk together miso, sesame oil, maple syrup, lemon juice, ginger, garlic and cayenne pepper.

  6. Drizzle dressing over each serving. Garnish with sesame seeds.

  7. Tip: For additional protein, top each bowl with tofu, chicken, beef, chick peas or a soft-boiled egg.

Miso Rice Bowl

This power rice bowl is meat-free made with hearty vegetables, avocado and a wonderful miso dressing. To make it completely vegan, do not include an egg or other animal proteins.

It is perfect for including in a meal prep plan for the week or enjoying as an elevated dinner in a bowl.

What is Miso?

The dressing for this rice bowl includes white miso, which is a traditional Japanese seasoning produced with fermented soybeans, salt and kōji. It results in a thick paste used for different sauces, soups and spreads. While there are many different types of miso ranging in color and flavor, this recipe uses white miso which is considered sweet and mild in comparison to others like red miso, with a very pungent flavor on account of its long fermentation.
