  1. In a large saucepan bring chicken stock to a boil, add quinoa and cook according to package instructions; set aside.
  2. Heat olive oil in a large skillet over medium high heat; add mushrooms, garlic and thyme. Cook, stirring occasionally, until tender, about 4 minutes; season with salt and pepper, to taste. Stir in quinoa until well blended.
  3. Serve immediately, sprinkled with Parmesan, if desired.

Recipe Variations

  • Use vegetable broth in place of chicken broth for a fully vegetarian meal.
  • Use seasonal mushrooms if available or whichever you choose including button, oyster or wild, baby bella, chanterelle and shimeji mushrooms.
