In a large saucepan, add rice, milk and 1/3 cup sugar. Bring to a simmer, stirring frequently. Allow to simmer 20-22 minutes, until rice is tender, and mixture thickens. Remove from heat and stir in vanilla. Allow to cool.
In a blender, add peach and blend until smooth. Transfer to a bowl. Add 1 cup sugar, egg, egg yolk and lemon juice to the bowl. Beat until incorporated.
In a double boiler over simmering water, add butter. Once melted, stir in peach mixture. Stir occasionally until thickened, about 10-13 minutes. Allow to cool slightly.
In eight-ten glasses or jars, layer rice pudding, peach curd and raspberries to fill, repeat layers as needed.
