Cooking With Sundried Tomatoes

Sundried tomatoes add a burst of tang and intense flavor to many dishes. These tomatoes are dried in the sun or a dehydrator, removing the moisture and giving them a bold sweetness umami taste. You can find them in a variety of dishes including pasta dishes, pizzas, salads, sandwiches and this Sun-Dried Tomato and Italian Sausage Risotto.

No matter what you use them in, they will add a burst of flavor and elevate your dish.

What Defines a Dish as Being Labeled “Florentine”?

The term “Florentine” comes from the Italian city of Florence nestled in the heart of Tuscany, which is known for its popular spinach dishes. In cooking, “Florentine” simply means a dish with spinach or laid on a bed of spinach.

The fresh spinach in this couscous dish adds not only gives it the name, but also adds a pop of color and subtle earthy flavor that compliments the garlic and sundried tomatoes to create a beautifully balanced dish.
