  1. Place rice, 2 cups almond milk, maple syrup, pumpkin pie spice, and vanilla in a medium-size pot and turn to high heat. Bring to a boil.​

  2. Once boiling, turn to low and cover. Let simmer for 10-15 minutes, until the rice is soft and the liquid is absorbed.​

  3. Slowly stir in the beaten egg followed by the pumpkin and 1/2 cup almond milk. Stir for another minute. Enjoy warm or cold.
