  1. Prepare quinoa according to package directions. Replace water with orange juice. Allow to cool.

  2. In a medium bowl, combine the red onion, orange, olive oil, honey, salt and pepper.

  3. Using a tall cooking ring, layer the ingredients. Start with the quinoa, followed by mashed avocado, then red onion mixture. Top with sliced avocado and chill in the refrigerator for at least 30 minutes.

  4. Put a base of salad greens on a plate and top with the quinoa tower. Remove the ring, and garnish with almonds. Drizzle vinaigrette on top.
