  1. Preheat oven to 400 ° F. Coat a 12-cup muffin pan with non-stick cooking spray.
  2. In a large mixing bow beat butter and honey until light. Add eggs; beat 3 minutes. Stir in buttermilk.
  3. In a medium bowl combine rice, flour, baking powder, salt and baking soda. Add to liquid mixture and stir with a spoon until blended.
  4. Fill prepared muffin cups 2/3 full. Bake 20 minutes or until done. Remove from pan at once.
