Instructions

  1. Combine cooked rice, milk, applesauce, egg, coconut oil, and vanilla in a medium-sized bowl. Whisk until well combined.
  2. Combine remaining pancake ingredients and stir into the brown rice mixture Heat a large nonstick skillet (sprayed with vegetable spray) over medium heat. Pour batter into skillet, about 1/4 cup per pancake.
  3. Flip after 2-3 minutes or when edges start to turn golden and bubbles begin to appear on surface.
  4. Cook another 1-2 minutes on second side until golden.
  5. Top pancakes with butter mixture and cooked apples, if desired.

How to make pancake

  • In a jug, whisk together 2 eggs, 1 3/4 cups of milk, and 1 teaspoon of vanilla essence. In a large bowl, sift 2 cups of self-raising flour.

  • Heat a large non-stick frying pan over medium heat. Ladle about 1/4 cup of batter into the pan for each pancake. Cook for 2-3 minutes or until bubbles start to appear on the surface, then flip and cook for another minute or so until the pancake is golden brown on both sides.

  • Serve the pancakes with maple syrup and extra butter if desired.
