Instructions

  1. Prepare quinoa according to package directions.
  2. Add two teaspoons of the canola oil into a large skillet over medium heat. Add onion and cook about 8 minutes, stirring until the onions are cooked through and lightly browned. Remove the onions, set aside; remove skillet from heat.
  3. In a medium bowl, lightly beat eggs with 1/8 teaspoon of soy sauce. Return skillet to the burner and add remaining teaspoon of canola oil. Swirl to coat the bottom. Add egg mixture, stirring to scramble the eggs. Remove eggs from skillet.
  4. Pour sesame oil into the wok and bring to medium heat. Add the cooked chicken, peas, carrots and the cooked onions; stir until well mixed, about 2 minutes.
  5. Add the quinoa, green onions and bean sprouts and mix together. Continue to stir-fry for another 3 minutes. Add the scrambled eggs and drizzle the entire mixture with the 3 tablespoons of soy sauce. Stir-fry for 1-2 minutes or until well blended and heated through.

Recipe Tips

Ensure your wok or pan is searing hot before adding the oil. When cooking, use a quick, tossing motion to cook the ingredients evenly and prevent burning. Feel free to experiment with different vegetables and seasonings to personalize your stir-fry! Consider adding a dash of sriracha, a drizzle of soy sauce, or a sprinkle of your favorite spices. Additional vegetables that would complement the flavors of this dish include broccoli, bell peppers, mushrooms, and baby corn spears.

Meatless Variations

For the discerning vegetarian palate, consider replacing chicken for tofu. The perfectly-cooked tofu will mimic the texture of chicken and provide a satisfying mouthfeel. Firm or extra-firm works best as it holds its shape well during cooking. First press your tofu and then cube it for a “chicken-like” texture. Before cooking, toss your tofu cubes in a mixture of cornstarch, soy sauce, sesame oil, garlic powder, and ginger powder for extra flavor.

Cooking Methods:

  • Pan-frying: Heat a pan with oil and cook your tofu cubes until golden brown. This method creates a crispy exterior and a tender interior.
  • Air-frying: Drizzle your tofu cubes with oil and air-fry them at 400°F for 15-20 minutes, flipping them halfway through.
