  1. Prepare the rice according to package instructions. Cool.

  2. In a large bowl, whisk together the orange juice, vinegar, mustard, shallot, salt and pepper. Slowly drizzle in the olive oil while continuing to whisk until the dressing is emulsified.

  3. In a bowl, combine the greens, cooled rice and dressing; toss to coat.

  4. To serve, lay out the sliced beets on a shallow platter. Top the beets with the dressed salad. Dot the salad with goat cheese.

How to Prepare Beets

There are two main ways to prepare beets:

  • Boiling: When boiling, make sure to wash the beets well to remove any dirt. Remove the stalks and boil them as they are, without chopping, for roughly 30 minutes, testing the softness of the flesh with a knife before removing them. This is the preferred method of cooking for beet salads, so if that’s what you’ve got in mind, be sure to leave plenty of time for cooling.
  • Baking: Alternatively, if you’re looking to get a fragrant and peppery flavor from your beets, then roasting or baking beets is the way to go. Once again, you’ll need to wash them well and remove the stalks. This time, however, partially slice the raw beet and wrap it in tin foil, then bake for 45 minutes at 400°.
