  1. Prepare rice according to package directions, using chicken broth as liquid.
  2. Whisk together lime juice, oil, honey and ginger in small bowl; set aside.
  3. Combine rice, chicken, apricots, onions and raisins in large bowl.
  4. Just before serving, drizzle dressing over salad and toss. Serve on lettuce lined individual serving plates.
  5. Alternative Salad Options:

    Pastas such as RiceSelect® Orzo or Pearl Couscous can be used in place of rice, if desired. For a more creamy option, use Arborio Rice for risotto.

Gloss Your Veggies

With this inventive use of honey, vegetables become savory delicacies with robust flavors. Put one or two tablespoons of butter in a pan and roast carrots or your favorite veggie. Add a splash of water and a dab of honey halfway through cooking. Let the liquid evaporate. What is left is a lovely glaze.

Amp Up Your Ice-Cream

Making a fancy ice cream sundae is probably not the first thing that comes to mind when considering how to use honey. Maybe it should! 1 cup of ordinary balsamic vinegar and 1/2 cup of honey should be boiled until they get thick and reduced by half. It will then get fudgy with a sweet-tartness that's great atop a scoop of vanilla. Add some sea salt on top for perfection.
