Ingredients

Instructions

  1. Prepare couscous according to package directions.
  2. Slice off top and bottom of 1 orange; stand on one of the cut ends. Slice off outer peel following natural curve of fruit, removing as much of the bitter white pith as possible. Working over a bowl to catch juices and using the membranes as a guide, cut each segment free from its membrane, letting it fall into the bowl. Repeat with remaining orange.
  3. Stir together couscous, honey, butter, orange flower water, vanilla, orange zest, cinnamon and cardamom. Fold in dates.
  4. Divide among 4 bowls. Top with orange segments and drizzle with any accumulated orange juice. Garnish with dollop of yogurt, pomegranate seeds and almonds.

Sweetened Couscous

Couscous is extremely light and fluffy when cooked and absorbs large amounts of flavor. And, most commonly associated with savory dishes, it is also ideal for using in this breakfast or snack bowl.

RiceSelect® Couscous offers a hearty base for this sweet blend infused with fruit, spices, and Medjool dates. Everything is tossed together for an elegant and bright combination of flavors from the orange segments complemented with pomegranate seeds, spices, dates and honey butter dressing.

This bowl also incorporates an added touch of orange flower water, or orange blossom water, which is made from the petals or blossoms of bitter orange trees. It is often incorporated into sweet Mediterranean dishes like cakes or couscous.

Prepare this bowl for a filling and elevated meal prep option to take throughout the week or serve as part of a scrumptious breakfast or brunch spread. To serve for a crowd, place on a tray instead of individual bowls for each guest to scoop up as they wish. Place the toppings like yogurt, pomegranate seeds and almonds to the side for everyone to add on as much or as little as desired.

Flavor and Texture Enhancing Tips

If you like to experiment with flavor in your dishes, try infusing the couscous with part water and part fresh fruit juice, almond, oat or soy milk, or coconut milk for an added creamy touch.

For a creamier base, use Arborio rice for risotto, which cooks up to a richer texture than couscous.
