  1. Prepare couscous according to package directions. Let cool completely.
  2. Whisk together oil, lemon juice, garlic, salt, pepper, cumin, coriander, allspice and cayenne.
  3. Toss together couscous, Swiss chard and vinaigrette. Add grape tomatoes, red onion, parsley, mint and chili pepper, tossing lightly until well combined.

Fresh Tabbouleh Ingredients and Tips

Also known as tabouli, this light yet satisfying vegetarian Mediterranean and Levantine salad is made with fresh herbs, couscous, and finely chopped vegetables all drizzled in a simple yet flavor-packed dressing of olive oil, lemon juice, seasonings, salt and pepper.

A few keys to making this recipe include:

  • Finer Moroccan-style couscous is preferred over larger Pearl Couscous. The finer couscous will blend better with the chopped herbs and vegetables.
  • Using quality herbs offer better flavor, so it's important to choose fresh parsley and mint.
  • Chop your ingredients finely for best results. Use a food processor to make chopping easier or a sharp knife.
  • To remove excess juice from the grape tomatoes, you may drain before tossing with the other ingredients, if desired.
  • While traditional tabbouleh recipes do not call for cucumber or feta cheese, feel free to add it in for additional Mediterranean flavor.

While this dish is made without meat, for a bit of extra protein chickpeas, tofu, shredded chicken or hard-boiled eggs can be added in. Or, to serve up a bit of spontaneous brilliance with a delicious Mediterranean and Middle Eastern inspired feast, pair with pita bread, Beef Kabobs and Parmesan Orzo, Chicken Shawarma with Turmeric Couscous, or a classic Risotto recipe made with Italian Arborio Rice.
