Melt butter in large stockpot over medium-high heat. Blend in curry powder and salt, stirring constantly for 30 seconds. Add onion and carrots; sauté 7 to 9 minutes, stirring frequently.
To infuse the dish with flavor, you can include garlic and either thyme or parsley, and stir for roughly 10 seconds until it becomes fragrant. Then, add the carrots and pour in both water and broth. Bring the mixture to a vigorous simmer on high heat.
Leaving the skin on the carrots can enhance the appearance if you’re looking for a rustic-style dish. Also, if the carrots are intended for a strained stock, broth, or sauce, keeping the peel on may be more advantageous. Peeling the carrots for soup won’t have a hugely different effect on the taste, but it may result in a slightly different color and softer texture.
