Preheat air fryer to 390F. Prepare rice according to package directions.
Add rice wine vinegar, sugar and salt to the cooked rice.
Line a sheet tray with plastic wrap. Transfer cooked rice and flatten out rice. Cut into rectangles. Brush with oil.
Place into the air fryer for 5 minutes or until slightly golden.
In a medium bowl, combine salmon, mayo, sriracha and soy sauce.
Spoon salmon mixture on top of each rice piece.
Garnish each with a slice of jalapeno.
